Orange Creamsicle swig Sugar Cookies

Ingredients

  • FOR THE COOKIES:
  • 6¼ cup cake flour*
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tarter
  • 1 cup butter, softened
  • 1¼ cup sugar + ¼ cup
  • ¾ cup powdered sugar
  • ¾ cup canola oil
  • 2 Tablespoons fresh orange juice
  • 1 Tablespoon orange zest
  • ⅛ teaspoon orange extract, optional
  • 1 teaspoon vanilla, optional
  • 2 eggs
  • FOR THE FROSTING:
  • 6 ounces white chocolate chips
  • 1 (8 ounce) package cream cheese, softened
  • ¼ cup butter, softened
  • 2 Tablespoons fresh orange juice
  • ⅛ teaspoon orange extract
  • 3 cups powdered sugar
  • orange food coloring, if desired

    Instructions

    1. FOR THE COOKIES: Preheat your oven to 350 degrees. In a medium size mixing bowl, mix your flour, salt, baking soda & cream of tarter. Set aside.
    2. In a stand mixer, cream the butter, 1¼ cup sugar & the powdered sugar for about 2 minutes. Slowly add the oil, orange juice, orange zest, orange extract & vanilla.
    3. Beat in the eggs one at a time.
    4. Slowly add the flour mixture to the wet ingredients (scrape the sides of the bowl as needed).
    5. Roll the dough into 2" balls and place on a parchment lined cookie sheet.
    6. Add the remaining ¼ cup sugar to a bowl or small dish. Use the bottom of a drinking glass (about 2½" in diameter) & dip it into the sugar then press (the sugar coated, bottom of the glass) into the ball of cookie dough until it's about ½" thick (the dough will form a jagged edge).
    7. Bake the cookies for 8 minutes (you don't want to over bake or they will be dry). Gently remove the cookies from the pan onto a cooling rack to let them cool. When cool, place in an airtight container and place in the fridge.
    8. FOR THE FROSTING: Place the white chocolate in a medium sized microwave safe dish. Melt according to the package directions. Let the chocolate cool for 3 minuets then beat in the cream cheese, butter, orange juice & orange extract. Beat on medium speed until well blended.
    9. Slowly add the powdered sugar and beat well. Add food coloring if desired.(If the frosting has small clumps, microwave for 30 seconds, stir, then microwave for 30 more seconds. The frosting will be slightly more runny but will set up firm again.)
    10. Frost the cookies, then let them chill in the fridge. Store in an airtight container in the fridge. Cookies are best cold.

    Ingredients

    • For the wings
    • 4 lbs chicken wings, drummettes and flats separated
    • 3 tablespoons olive oil
    • Kosher salt
    • Black pepper
    • For the sauce
    • 1 1/2 cups Coca-Cola
    • 3/4 cup dark brown sugar
    • 2/3 cup tomato paste
    • 5 garlic cloves, crushed
    • 1/3 cup red pepper hot sauce (like cayenne or tabasco pepper sauce)
    • 1 tablespoon smoked Spanish paprika
    • 1 teaspoon kosher salt

    Instructions

    1. Prepare the wings:
    2. Preheat oven to 400 degrees. Top 2 baking sheets with a metal rack. (You can use the same kind you use to cool cakes.) Line a third baking sheet with foil.
    3. Remove chicken wings from package and pat very dry with a paper towel. Toss in a bowl with olive oil and generously season with kosher salt and black pepper, then arrange on the prepared baking sheets, allowing at least 1 inch between each piece of chicken on all sides.
    4. Bake for 45 minutes to 1 hour, or until crisp and golden brown. (You can turn the broiler on for the last 3-5 minutes to give them even more color, if desired.)
    5. Make the sauce
    6. Combine Coca-Cola, brown sugar, tomato paste, and garlic in a medium saucepan over high heat. Bring to a boil, then lower heat to a simmer. Whisk in hot sauce, paprika, and salt. Let simmer 5 -10 minutes, whisking occasionally, until the sauce thickens. Taste and adjust seasoning with additional salt or hot sauce, as desired.
    7. Once the chicken is ready, remove from oven and use tongs to roll each piece in the sauce, then place on the prepared foil-lined baking sheet. Lower oven to 350, and bake 7 minutes to set glaze. Serve immediately with additional sauce on the side for dipping.

    Ingredients

    • 2 large eggs
    • 1 tbsp. skim milk
    • 1 tbsp. freshly chopped chives
    • kosher salt
    • Freshly ground black pepper
    • 1 tbsp. butter
    • 4 slices cooked bacon
    • 1/2 c. black beans
    • 1 avocado, thinly sliced
    • 1/2 c. shredded Cheddar
    • Salsa, for serving

    Instructions

    1. In a small bowl, whisk together eggs, milk, and chives, and season with salt and pepper.
    2. In a large nonstick skillet, melt butter. Once pan is completely coated, add the egg mixture. Tilt pan back and forth to make sure it's completely coated, then let cook, 2 minutes. Once you can move egg back and forth, carefully flip and cook 2 minutes more.
    3. Transfer to a plate and top with bacon, black beans, avocado, cheddar, and salsa. Roll up into a burrito and serve.

    Ingredients

    • For the truffles
    • 1 box strawberry cake mix
    • 8 oz cream cheese frosting
    • For the coating
    • 16 oz white chocolate melted
    • 1 tbsp shortening
    • 1/2 cup graham crackers crushed
    • 1/4 cup red sprinkles

    Instructions

    1. For truffle mix :
    2. Prepare cake mix as directed, let cool.
    3. Line cookie sheet with parchment paper.
    4. Once cool, roll cake mix into equal sized balls.
    5. For coating :
    6. Melt white chocolate and shortening today and stir well.
    7. Dip balls into chocolate mixture and set aside to harden.
    8. Once cool, drizzle white chocolate on tops of truffles and sprinkle with crushed graham crackers
    9. Repeat white chocolate drizzle and garnish with red sprinkles.

    Ingredients

    • 1 banana
    • Yogurt Coating
    • 3 cups Greek yogurt
    • ⅓ cup almond milk
    • Toppings
    • Granola, to taste

    Instructions

    1. Cut the bananas in half horizontally.
    2. Insert popsicle sticks in the middle of the banana halves. Transfer bananas to a parchment paper-lined baking sheet, and freeze until solid.
    3. In a tall glass or mixing cup, add Greek yogurt and almond milk, and mix together. If the texture is too thick, add more almond milk until the coating is silky.
    4. Place desired toppings onto a plate. Dip the bananas into the yogurt coating, then roll or sprinkle on toppings.
    5. Place bananas in freezer until the coating has hardened.
    6. Enjoy!
