Ingredients

  • 2 tablespoons real butter
  • 2/3 cup all natural peanut butter, or your choice of nut butter
  • 1 cup unsweetened all natural shredded coconut
  • 4 drops of vanilla lakanto, 20% off with code MELISSA20
  • Note* if using a granulated sweetener add it to the butter when microwaving to melt.

Instructions

  1. Melt butter in microwave.
  2. Stir in peanut butter.
  3. Add sweetener and coconut. Mix well.
  4. Spoon onto sheet pan.
  5. Freeze for 5-10 minutes.
  6. Store in the refrigerator, bagged.

Ingredients
  • 14 oz frozen okra
  • small head of fresh cauliflower
  • 20 cloves of garlic
  • 4 cups of water
  • 1 tsp of salt
  • 2 tbsp buttery coconut oil or refined coconut oil
  • chicken broth optional
Instructions
  1. Add the first 4 ingredients to a large soup pot. Cover and turn the heat to high. When it boils reduce the heat to medium and simmer covered for 1 hour. Add the salt and coconut oil.
  2. Carefully transfer to a blender and puree. Thin with chicken broth, if desired.

Tortellini Al Forno

Ingredients

  • 20 oz. refrigerated Tortellini, (I like “Giovanni Rana” brand, and I prefer cheese stuffed!) 
  • 6 slices bacon, uncooked 
  • 2 teaspoons garlic, minced 
  • 2 Tablespoons all-purpose flour 
  • 1 pint half and half, (equivalent to 2 cups), you can sub whole milk. Salt/pepper, to taste 
  • ½ teaspoon dried Italian seasoning 
  • ¼ cup Parmesan, shredded 
  • ¼ Asiago cheese, shredded (can also use more Parmesan instead) 
  • ½ cup mozzarella cheese, shredded ¾ cup spinach, finely shredded (optional)

Instructions

  1. Use kitchen shears to cut the bacon into 2-3 inch pieces so that they equally cover the pan and cook evenly.
  2. In a large skillet, (preferablycast iron), cook the bacon slowly on low heat. *Low and slow is best for bacon*.
  3. Once the bacon is nearly cooked and crisp on each side, cook the tortellini in a large pot according to package instructions. Set aside.
  4. Remove the cooked bacon from the pan, set aside to cool, and leave 2 Tablespoons of bacon grease in the pan. Keep the heat on low and add the garlic to the pan, cooking for about one minute.
  5. Increase the heat to medium. Gradually whisk in the flour, stirring constantly, until all flour is incorporated and the grease has thickened.
  6. Gradually add the half and half (keep stirring). Bring the mixture to a boil and add the salt/pepper and Italian seasoning. Reduce the heat back to low and stir for about 2 more minutes.
  7. Add the Parmesan, Asiago, and mozzarella cheeses. Stir until well incorporated and thick. Toss in the spinach and the Tortellini and use a rubber spatula to carefully incorporate it into the sauce.
  8. Once the spinach has wilted (about 1 minute), turn off the heat. Crumble the cooled bacon into smaller pieces and sprinkle over the Tortellini. Serve and enjoy!

  • Chocolate cake (may sub in your favorite box mix)
  • 2 cups sugar
  • 1/2 cup cocoa powder
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 cups hot water
  • 3/4 cup oil
  • 2 T white vinegar
  • 1 T instant coffee granules
  • 1/2 T vanilla extract
  • 1/2 T almond extract
  • For the Dulce de Leche (may sub a can of dulce de leche warmed and thinned with a Tablespoon or two of milk)
  • 4 cups whole milk
  • 1 1/4 cups sugar
  • 1/2 tsp baking soda
  • 2 tsp vanilla extract
  • For the whipped cream frosting (may sub a tub of whipped topping)
  • 5 T flour
  • 1 cup milk
  • 1 cup sugar
  • 1 cup butter, softened (must be real butter)
  • 1 tsp vanilla extract
  • For the hot fudge sauce:
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup butter
  • For the rolos?! (I had to put them somewhere!)
  • 10-12 rolos quartered


Instructions

  1. For the cake:
  2. Prepare a 9x13" pan and warm your oven to 350 F.
  3. Whisk together the sugar, cocoa, flour, baking soda and salt in a large bowl.
  4. In another bowl, stir together water, oil, vinegar, coffee and extracts.
  5. Pour wet ingredients into dry ingredients and stir until just mixed.
  6. Spread the batter into the greased pan and bake for about 50 minutes, or until a toothpick tests clean.
  7. For the dulce de leche :
  8. In a small bowl, stir the baking soda in a couple Tablespoons of the milk until dissolved and set aside.
  9. Choose a pot much larger than you think you'll need to avoid bubbling over. I usually use a 6 qt dutch oven. Stir together the remaining milk and sugar.
  10. Bring the mixture to a low boil over medium heat, stirring frequently. Turn off heat and stir in the dissolved baking soda mixture. This is one of those bubbling like crazy moments, so be careful as you stir.
  11. Return to medium heat and continue to cook, stirring frequently, until the mixture is golden and thick like honey. This will take about 45 minutes to an hour. You don't need to stand over it the whole time, but you'll want to keep an eye on it as it will bubble occasionally and you don't want it sticking to the bottom of the pan as it gets thicker.
  12. Remove from heat and stir in vanilla extract and let cool slightly.
  13. For the whipped cream frosting :
  14. The most crucial part to this frosting turning out is getting the consistency of this first step correct. In a saucepan, whisk together flour and sugar. Add the cold milk a few tablespoons at a time to start, whisking in between to avoid lumps. Once you have a paste, stir in the remaining milk. Make sure there are no lumps, then turn on the burner to medium heat. Continue to whisk and cook until the mixture thickens to a paste consistency. You want it to be pretty thick. It will be tempting to walk away and so something else, but don't. Once it starts to thicken it will go really quickly and it is important you don't get lumps. Set thickened paste aside to cool.
  15. Once paste is room temperature, add butter and vanilla to mixer bowl. Turn on low and stir until incorporated. Add flour/milk paste and whip on high for about 10 minutes. You want to make sure the frosting has plenty of time to get nice and fluffy.
  16. For the hot fudge :
  17. Whisk together sugar and cocoa in a mediym saucepan to make sure there aren't any lumps.
  18. Add milk and butter. Cook over medium-low heat until it comes to a hard boil.
  19. Boil for 2-3 minutes, stirring frequently.
  20. Remove from heat and allow to cool some before drizzling.
  21. To assemble. :
  22. While cake is still warm, poke with the round end of a wooden spoon to create holes across the top of the cake.
  23. Make sure your dulce de leche is a drizzling consistency. Warm it a bit and thin with a Tablespoon or two of milk if needed. Then drizzle over the cake. It will be easier to frost if you put the cake in the refrigerator for a bit after this to let the dulce de leche thicken back up and set.
  24. Spread frosting over cooled cake.
  25. Sprinkle chopped Rolos over the cake and drizzle with fudge sauce.
  26. Serve small pieces with a scoop of ice cream and additional hot fudge sauce!

Ingredients

  • 1 bottle of white wine
  • 2+ cups of frozen peach and/or mango slices
  • 1+ cups of frozen strawberries
  • 3 cups of ice cubes


Instructions

  1. Blend 2 cups (or ⅔ bottle) of white wine with about 2 cups of frozen peaches (add mango if you fancy it) as well as 2 cups of ice cubes.
  2. Pour into four glasses.
  3. Blend 1 cup of white wine (or the last ⅓ of the bottle) with about 1 to 1.5 cups of strawberries and 1 cup of ice.
  4. Pour it on top of the peach slushy.
  5. Add a straw and serve icy!

Ingredients

  • Crust:
  • 2 1/2 cups graham crumbs (2 sleeves)
  • 1/2 cup unsalted butter
  • Layers:
  • 2 cups powdered sugar, sifted
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 8 oz container Cool Whip
  • 20 oz can crushed pineapple, drained well

Instructions

  1. Preheat oven to 300 F.
  2. Melt butter in the microwave and allow to cool. Combine the crumbs and butter and toss together until incorporated.
  3. Press 2 cups of the crumb mixture firmly into an 9×9 square pan and bake for 8-10 minutes. Place on wire rack to cool.
  4. Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until incorporated. Turn up and beat well for a minute or so. Add a heaping tablespoon of the drained pineapple and stir in with a rubber spatula. Spread the cream cheese and pineapple mixture over the crust.
  5. Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

Ingredients

  • 1/2 cup soy sauce , (120ml)
  • 1/3 cup olive oil, (80ml)
  • 1/4 cup Worcestershire sauce, (60ml)
  • 1/4 cup minced red onion, (40g)
  • 2 tablespoons honey, (30ml)
  • 2 tablespoons sliced green onions, (10g)
  • 1 tablespoon minced garlic
  • 2 teaspoons chopped thyme
  • 2 teaspoons chopped rosemary
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon red wine vinegar
  • 2 steaks, (ribeye, New York strip, porterhouse, T-bone, skirt, sirloin, flank, flat iron)

Instructions

  1. In a medium-sized bowl whisk together soy sauce, olive oil, Worcestershire sauce, red onion, honey, green onions, garlic, thyme, rosemary, salt, and pepper.
  2. In a small bowl add 1/4 cup of the steak marinade and red wine vinegar, set aside.
  3. Add steak to a baking dish or large resealable plastic bag.
  4. Pour the marinade over, cover, and refrigerate for 30 minutes. Press out the excess air if using a ziplock bag.
  5. Flip steak over and marinate an additional 30 minutes in the refrigerator.
  6. Remove the steak from the marinade and pat dry with paper towels to remove excess moisture from the surface.
  7. Discard marinade.
  8. Cook steaks using the desired cooking method, such as pan sear, reverse sear, or grill.
  9. Transfer steak to a cutting board and tent with foil for 10 minutes before slicing.
  10. Pour reserved marinade over the steak or serve on the side.

Ingredients

  • CRUST
  • 1/4 cup butter, melted
  • 24 Oreo cookies
  • PIE
  • 1/2 tsp vanilla extract
  • 4 Oreo cookies, crushed (optional)
  • 1/2 cup heavy whipping cream
  • 2 Tbsp powdered sugar
  • 1/2 gallon ice cream (chocolate or coffee)
  • 1/3 cup chocolate sauce

Instructions

  1. For crust, preheat oven to 350°.
  2. Finely crush Oreo cookies in a food processor. Add the melted butter and mix till well combined. Press into the bottom and up the sides of a 9" pie pan.
  3. Bake crust for 8-10 minutes. Cool completely, then place in the freezer
  4. Scoop ice cream into a cake pan or bowl, chop and stir till smooth. Spread into the crumb crust. Cover and freeze for several hours.
  5. When ready to serve, beat whipping cream in a small bowl till soft peaks form. Beat in powdered sugar and vanilla.
  6. Drizzle pie with chocolate sauce, then top with whipped cream and additional cookie crumbs if desired.
