Ingredients

  • 1 lb Ground Beef
  • 1/2 lb Italian Sausage
  • 1/4 cup chopped white onion
  • 1 1/2 cup Marinara Sauce
  • 3/4 tsp Garlic Powder, divided
  • 1 tsp Oregano, divided
  • 1/2 cup Ricotta Cheese
  • 1 cup Shredded Mozzarella, divided
  • 2/3 cup Parmesan Cheese, divided
  • Chopped parsley, for garnish (optional)


Instructions

  1. Preheat the oven to 400 degrees.
  2. In a 12-inch cast iron skillet (or other oven safe equivalent), brown the ground beef and ground sausage together over medium heat on the stovetop until no pink remains (about 15 minutes). Drain the excess fat and return to heat.
  3. Add the onion to the pan and saute with meat until it begins to soften, 3-5 minutes. Pour the sauce, 1/2 tsp oregano and 1/2 tsp garlic powder into the pan with the meat sauce and allow to simmer for 5 minutes.
  4. In a medium bowl, mix the ricotta, 1/2 cup of mozzarella, and 1/3 cup of the Parmesan. Add a bit of salt and pepper to taste and add the remaining oregano and garlic powder to the cheese mixture and fold until completely combined.
  5. Turn off the heat and spread the meat around the pan until it's an even layer. Place spoonfuls of the cheese mixture around the pan, pushing them down a bit with your spoon to the bottom of the pan.
  6. Sprinkle the top with the remaining mozzarella and Parmesan. Bake for 20 minutes until bubbling and the top begins to turn golden. Garnish with chopped parsley, if desired. Serve warm.

Ingredients

  • 1 1/2 cups Oreo baking crumbs (or 24 Oreo cookies, finely crushed)
  • 5 tablespoons butter, melted
  • 900 grams plain cream cheese (4 cups or about 32 ounces)
  • 1 3/4 cups powdered sugar
  • 3 cups whipped cream
  • 24-28 coarsely crushed Oreo cookies
  • extra whipped cream, chocolate sauce, and Oreo cookies for garnish


Instructions

  1. Combine the Oreo baking crumbs and the melted butter and press the mixture into the base of a spring form pan.
  2. Whip the cream cheese on high speed until smooth and creamy. Add the powdered sugar and continue to whip on high speed until well combined.
  3. Fold the whipped cream and the coarsely crushed Oreo cookies into the cream cheese mixture with a rubber spatula just until well combined.
  4. Pour the cream cheese mixture into the prepared pan and smooth out the top.
  5. Chill the cheesecake in the freezer for at least 2 hours (4 hours or more is ideal), and remove to room temperature for 20-30 minutes before garnishing with additional whipped cream, chocolate sauce, and crushed Oreo cookies and serving.

Ingredients

  • 1 box yellow butter recipe cake mix & ingredients to make
  • 2 small boxes French Vanilla instant pudding
  • 1 tub chocolate frosting or chocolate ganache Recipe below

Instructions

  1. Bake cake as directed on the box in a 9x13 baking pan.
  2. Prepare the pudding as directed on the box.
  3. While the cake is still warm, use the end of a wooden spoon to poke holes randomly through the cake about an inch apart.
  4. Spread the pudding over the cake, pushing it into the holes.
  5. Refrigerate for 1 1/2 - 2 hours.
  6. Remove the lid and seal from the frosting and microwave for 15-20 second intervals, stirring in between each interval, until the frosting can be poured, but not bubbling.
  7. Spread the frosting over the cake and refrigerate 4 hours or overnight.

Ingredients

  • Chicken thighs
  • 4 chicken thighs , skin-on, bone-in
  • 1 tablespoon vegetable oil
  • salt and pepper
  • 1 teaspoon Italian seasoning dried thyme, oregano
  • Mushroom sauce
  • 6 oz white mushrooms
  • 5 slices bacon cooked, chopped
  • 1 cup heavy cream
  • 1/8 teaspoon salt
  • 5 sprigs fresh thyme

Instructions

  1. Preheat oven to 350 F.
  2. Season both sides of chicken thighs generously with salt and pepper and Italian herb seasoning mix (usually a combination of dried thyme, oregano and other herbs). Heat vegetable oil on medium-high heat in a large skillet. Add chicken thighs skin-side down. Cook for about 5 minutes, on the skin side until nicely browned.
  3. Transfer chicken thighs, skin side up, to the foil-lined baking sheet and bake at 350 F for about 20 minutes or until chicken thighs are completely cooked through and no longer pink in the center.
  4. In the mean time, make the mushrooms sauce:
  5. Heat vegetable oil in a large skillet on medium heat. Add sliced mushrooms (without salting - to ensure the mushrooms get caramelized) and cook on medium heat for about 3 minutes flipping once.
  6. Add chopped cooked bacon to the skillet.
  7. Add heavy creamy, 1/8 teaspoon salt and snipped fresh thyme, bring to boil, stir, immediately reduce to simmer and simmer for about 2 minutes on very low heat for flavors to blend and sauce to reduce a bit. Taste and add more salt if needed.
  8. When chicken is done baking and chicken thighs are completely cooked through, add cooked chicken thighs to the skillet and spoon the sauce and the mushrooms on top of chicken thighs.

  • For the salad :
  • 1/4 cup uncooked quinoa
  • 1/2 cup black olives, sliced
  • 1/2 cup roasted peppers, sliced
  • 1/2 cup fresh or canned corn kernels
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/3 cup feta cheese crumbles
  • For the dressing :

  • 1 tsp red wine vinegar

Instructions

  1. Start by boiling the quinoa in slightly salted water according to the package instructions (15-20 minutes). Once cooked, drain and let it cool.
  2. Prepare the dressing by whisking all the ingredients together.
  3. in a medium bowl, combine quinoa and the rest of the salad ingredients and pour the dressing on top. Mix everything gently and enjoy.
