Ingredients

  • FOR THE SUGAR SYRUP:
  • 1 ¼ cups granulated sugar
  • ¾ cup water
  • 1/3 cup honey
  • 1 Tablespoon lemon juice
  • 3 large strips lemon zest removed in large strips with vegetable peeler
  • 1 medium cinnamon stick
  • 5 whole cloves
  • 1/8 teaspoon table salt
  • FOR THE NUT FILLING:
  • 8 ounces blanched slivered almonds
  • 4 ounces walnuts
  • 1 ¼ teaspoons ground cinnamon
  • ¼ teaspoons ground cloves
  • 2 Tablespoons granulated sugar
  • 1/8 teaspoon table salt
  • EVERYTHING ELSE:
  • 1 cup unsalted butter melted
  • 1 pound frozen phyllo thawed

Instructions

  1. Preheat the oven to 400. Spray a sheet pan with non stick cooking spray or grease with Olive oil, coconut oil or butter. (I use Olive oil)
  2. In a large bowl, combine all ingredients, minus the buffalo sauce. Mix well.
  3. Use your hands to form 2″ balls, mixture will be sticky. If desired set out a small amount of almond or coconut flour to dust your palms with. I personally just pushed through it and made a mess all over my hands!
  4. Place meatballs on a sheet pan. Bake for 15 minutes or until center has reached 160ยบ
  5. Remove meatballs from the oven. Place in a skillet or pot over medium low heat. Coat with buffalo sauce. Continue to cook just until sauce is warmed.
  6. Serve over pureed celery root or cauliflower that has been mixed with a ranch seasoning packet! Or eat as is.

Ingredients
  • 1/2 onion sliced
  • 1/2 bell pepper sliced
  • 1 tablespoon olive oil
  • 1/2 cup black beans drained
  • 1 tablespoon taco seasoning
  • 4 medium soft flour tortillas
  • 2 avocados peeled, halved, seeded and sliced
  • 1/4 cup minced cilantro
  • 1 lime cut in half
  • 1 cup light Mexican Cheddar or mozzarella cheese
  • oil or cooking spray for grilling
Instructions
  1. In a medium pan over medium-high heat, saute onion and bell pepper in 1 tablespoon oil for 2-3 minutes or until tender. Add the black beans and taco seasoning. Cook for another minute. Transfer mixture into a small bowl and set aside. 
  2. Rinse and wipe down pan and return to heat. Drizzle with a light layer of oil or spray with cooking spray. 
  3. In a small bowl, lightly mash the avocados with a fork. Stir in cilantro and juice of 1/2 lime, season with salt and pepper to taste. Spread a quarter of mashed avocado onto half of a tortilla. Top with bean mixture and 1/4th cup of cheese. Fold the tortilla closed over the veggies. Repeat until all tortillas are filled and all fillings are used. 
  4. Cook on medium-high heat for 2-3 minutes per side or until the outside is crispy and cheese has fully melted. Serve with your favorite salsa or sour-cream, Enjoy!

Ingredients

  • 1 Tbsp Olive oil
  • 2 cloves Garlic diced
  • 1 lb Shrimp, , cooked and peels tails off
  • 18 oz Zucchini noodles, (4-6 zucchinis)
  • 1 c . Cherry tomatoes, , halved
  • 4 leaves Fresh Basil
  • 1 jar Bertolli® Creamy Basil Alfredo Sauce
  • Note: If you want to use fresh, , uncooked shrimp you can. Just saute the shrimp with the garlic for 2-3 minutes or until it becomes pink then proceed with the recipe as written.

Instructions

  1. In a skillet over medium high heat add diced garlic and saute for 30 seconds.
  2. Add shrimp, zucchini, tomatoes, fresh basil, and Bertolli® Creamy Basil Alfredo Sauce.
  3. Cook for 5-7 minutes or until warmed through.

  • 2 cups canned coconut milk
  • 1/3 cup xylitol, erythritol, or sweetener of choice
  • 1/8 tsp salt
  • 1 1/2 tsp pure vanilla extract or vanilla bean paste
  • optional ingredients for desired flavor

Instructions

  • Be sure to use full-fat canned coconut milk, not lite or coconutmilk beverage. If desired, you can use the seeds from a vanilla bean instead of the extract. To make the keto ice cream: Stir together the milk, sweetener, salt, and vanilla extract. If you have an ice cream machine, simply churn according to manufacturer’s directions. Or to make it without an ice cream machine, freeze the mixture in ice cube trays, then blend the frozen cubes in a high-speed blender such as a Vitamix OR thaw them enough to then blend in a food processor or regular blender. Eat as-is, or freeze an hour or so for a firmer texture. Due to not having any preservatives or stabilizers, the keto ice cream is best the day it’s made, but you can technically freeze leftovers up to a month and thaw before serving.

Ingredients

  • Prime Rib
  • 1 2-6 Bone Prime Rib Roast (Boned and Tied)
  • 3 tbsp olive oil
  • 3-4 clove garlic (Sliced or Minced)
  • Prime Rib Rub
  • 1 tbsp Dried Thyme
  • 1 tbsp Dried Rosemary
  • 1 tbsp Black Pepper
  • 1 tbsp Onion Powder
  • 1 tbsp Garlic Powder
  • 2 tbsp Kosher Salt


Instructions

  1. Remove the prime rib from the refrigerator 4 hours before cooking.
  2. minutes before cooking, bone and tie the meat (Optional)
  3. Cut 1/2" slits on the top of the roast and insert minced or sliced garlic.
  4. Rub the outside of the roast with high quality olive oil.
  5. Combine the rosemary, thyme, kosher salt, black pepper, onion powder and garlic powder and spread evenly over the roast.
  6. Let rest while the oven pre-heats to 500 degree F (260 degree C).
  7. Transfer the roast to a roasting pan, bone side down.
  8. Insert the thermometer into the center of the roast and place in the oven (2nd rack from the bottom).
  9. Calculate your initial cooking time by allowing 5 minutes per pound of meat (a 9 lb roast would cook for 45 minutes while a 6 lb roast would cook for 30).
  10. This will provide a nice crunch on the exterior. The seasoning rub will get charred but that's what creates the deeply savory crust.
  11. After your calculated cooking time is up, turn the oven off but DON'T OPEN THE OVEN DOOR.
  12. After 2 hours the center of your roast will be 135 degrees F, which is medium-rare.
  13. If you prefer medium just keep it in the oven until it reaches 150 degrees F.
  14. Remove from the oven and let rest for 10 minutes.

Ingredients

  • 1 Slider buns
  • 1 lb Breaded Chicken Tenders * *These should be cooked already**, (weight is approx.)
  • 2 c Pasta sauce
  • 2 c Mozzarella cheese, shredded
  • 1/2 c Parmesan cheese, shredded
  • 3 tbsp Butter, melted
  • 1 tsp Garlic powder, (more to taste)
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 350°F.
  2. Place the bottom half of the slider buns in a greased casserole dish.
  3. Place cooked chicken tenders on the bottom buns and then spoon the sauce over the chicken.
  4. Combine the mozzarella and Parmesan cheese and sprinkle it over the sauce.
  5. Place the top buns on the sliders.
  6. Melt the butter and mix the garlic powder in until it is thoroughly combined. (feel free to add more garlic powder if you like garlic as much as I do!)
  7. Pour the melted butter over the buns and then sprinkle with Italian seasoning.
  8. Cover the dish with foil and bake for 10 minutes, then remove the foil and continue baking for another 10 minutes or until cheese is melted.
  9. Enjoy!
