Ingredients

  • 6 Large Croissants
  • 1 Pint Fresh Blueberries
  • 8 Ounces Cream Cheese, Softened
  • 1⅓ Cups Sugar
  • 4 Eggs
  • 3 Teaspoons Vanilla
  • 1 Pint Whipping Cream
  • Powdered Sugar (optional)

Instructions

  1. Grease a 9x13 pan.
  2. Cut up the croissants into bite size pieces and layer evenly in your pan. Set aside.
  3. In a food processor if you have one, add cream cheese, sugar, eggs, vanilla, and whipping cream. Combine on low for 5 minutes. (You can also use hand beaters or a stand mixer if you don't have a food processor.)
  4. Pour mixture over blueberries and croissants.
  5. Set aside and let soak for 20-30 minutes.
  6. Preheat oven to 350 degrees.
  7. Bake for about 45 minutes or till lightly browned and the center is set.
  8. Let stand for 10 minutes.
  9. Sprinkle with powdered sugar.
  10. Serve.

Ingredients

  • 1 1/2 pounds of Jennie- 0 Lean ground turkey breast or fat-free turkey breast
  • 1/2 a small onion, diced
  • 1 small zucchini, diced into fine pieces
  • 1 cup of tomato sauce (optional)
  • 2 cloves of garlic
  • 2 cans of enchilada sauce (hot or mild)
  • 10 6 in flour tortillas
  • 8 oz of low-fat Mexican cheese blend
  • Cooking spray

Instructions

  1. Preheat oven to 375.
  2. Brown ground turkey in a pan until it’s no longer pink. Drain any extra fat. Add in zucchini, onion, garlic and cook for 5 minutes. If you don’t like to cut your vegetables feel free to add them to a food processor and have that do it for you. In the recipe video I cook the onions and zucchini first and then ADD in the turkey. You can do it either way.
  3. In a bowl add in enchilada sauce and 1 cup of tomato sauce. Tomato sauce is optional (I normally don’t add the tomato sauce). Add half of the sauce into the pan and reserve the rest of the sauce for the top of the enchiladas.
  4. Place about 1/2 cup of turkey mixture onto a flour tortilla and roll up like a burrito and lay seam side down in a 9 X 13 baking dish. When all flour tortillas are done spray with cooking spray. If there are any extra turkey and vegetable mixture you can add that to the top of the enchiladas. Sprinkle with cheese on top.
  5. Cook enchiladas for 20 – 25 minutes. Take out of the oven. Serve with some salsa or sour cream.

Ingredients

  • 2 tsp olive oil
  • 4 (6 oz) skinless salmon fillets (1-inch thick),
  • Salt and freshly ground black pepper
  • 2 cloves garlic , minced
  • 2 1/2 tsp minced fresh rosemary
  • 5 Tbsp chicken broth , divided
  • 1 1/2 tsp orange zest
  • 2/3 cup fresh orange juice
  • 1 Tbsp fresh lemon juice
  • 1 1/2 Tbsp honey
  • 2 1/2 tsp cornstarch

Instructions

  1. Heat olive oil in a large non-stick saute pan or skillet over medium-high heat.
  2. Season both sides of salmon with salt and pepper.
  3. Add salmon and to pan and cooked until browned on both sides and cooked through, about 3 - 4 minutes per side. Transfer salmon to a plate while leaving oil in pan.
  4. Add garlic and rosemary to pan and saute 20 seconds, then add 1/4 cup chicken broth and simmer until mostly reduced.
  5. Stir in orange zest, orange juice, lemon juice and honey. In a small bowl whisk together remaining 1 Tbsp chicken broth with cornstarch.
  6. Pour into pan, season sauce with salt and pepper to taste then bring to a boil and allow to boil 1 minute, stirring constantly.
  7. Return salmon to pan, spoon sauce over salmon.

  • For the crust:
  • 1 cup graham cracker crumbs
  • 4 tablespoons melted butter
  • For the cheesecake:
  • 1 small box orange Jello (the 4-serving box, 85 grams)
  • 2/3 cup boiling water
  • 900 grams cream cheese (approximately 32 ounces)
  • 1/3 cup powdered sugar
  • zest of one large orange
  • 2 cups whipped cream
  • For garnish:
  • orange zest
  • whipped cream

   Instructions

  1. Combine the graham cracker crumbs and the melted butter in a bowl and press them into the bottom of a 9-inch spring form pan.
  2. Chill the crust in the freezer until ready to use.
  3. Add the orange Jello powder to the boiling water and stir until dissolved. Set aside to cool for 5 minutes.
  4. Whip the cream cheese and the powdered sugar until well combined.
  5. Add the Jello mixture to the cream cheese mixture slowly, mixing continuously until everything is incorporated.
  6. Gently fold in the orange zest and the whipped cream with a rubber spatula until combined and pour the mixture into the chilled graham cracker crust.
  7. Chill the cheesecake overnight to set and serve with some additional whipped cream and citrus zest for garnish.

  • Oil for frying - about 1/2 - 3/4 cup
  • 4 boneless skinless chicken breasts - about 4-5 oz each
  • 3/4 cup Parmesan cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1-1 1/2 cups shredded Asiago cheese
  • 3-4 slices bacon - cooked and crumbed (can leave slightly under-done, it will finish cooking under broiler)
  • 1 egg beaten
  • 1 tablespoon water

Instructions

  1. Preheat oven to 350 degrees
  2. In a small shallow bowl, mix egg and water
  3. In another shallow bowl, mix Parmesan cheese, pepper salt and garlic
  4. Heat oil over medium high heat
  5. Dip each chicken breast first in egg mixture then in cheese
  6. Fry in hot oil until crust is golden brown
  7. Prepare a baking pan by covering with foil and placing wire rack on top
  8. Place chicken on rack and bake about 20 minutes or until juices run clear
  9. Time will depend on thickness of chicken
  10. Remove from oven and turn oven to broil
  11. Top each piece of chicken with Asiago cheese and bacon and place under broiler to melt cheese

  • Cooking spray
  • 6 tbsp. melted butter
  • 1 tsp. Italian seasoning
  • 1 tsp. garlic powder
  • Pinch kosher salt
  • Pinch crushed red pepper flakes
  • All-purpose flour
  • 1 tube Pillsbury pizza dough
  • 2 (12-oz.) packages cocktail weiners
  • DIPPING SAUCES
  • Marinara, warmed
  • Mustard
  • Ranch

Instructions

  1. Preheat oven to 400°. Grease inside of a 8” springform pan with cooking spray. In a small bowl, whisk together butter, Italian seasoning, and garlic powder. Season with salt and pepper flakes.
  2. On a lightly floured surface, unroll pizza dough and cut into 1”-x-2” rectangles.
  3. Brush top of each with butter mixture, then wrap each cocktail weiner in pizza dough and pinch seam shut.
  4. Place pigs in blanket standing upright in springform pan. They should be snug, but not too tightly packed together. (Otherwise dough won’t bake!) Brush top with remaining melted butter mixture.
  5. Bake until golden, 50 to 55 minutes.
  6. Let cool for 10 minutes before removing from pan.
  7. Serve warm with dipping sauces.

  • FOR THE SCONES
  • 2 cups (250g) plain/all-purpose flour
  • 1/2 cup (100g) caster/granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • 1 large egg
  • 1/2 cup (120ml) heavy cream
  • 2 teaspoons vanilla extract
  • 1 cup (175g) chocolate chips
  • FOR THE GLAZE
  • 1 cup (125g) icing/powdered sugar
  • 1 - 2 tablespoons milk

Instructions

  1. For the Scones
  2. Preheat the oven to 200C/400F/Gas 6. Line a baking tray with parchment paper or a silicone mat, and set aside.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the butter and, using a pastry cutter, fork, or your fingertips, work it into the mixture until it resembles coarse crumbs. You may also use a food processor. Fold in the chocolate chips.
  4. In a separate bowl, whisk together the egg, cream, and vanilla until combined. Pour into the flour mixture and gently fold in until a soft dough is formed. Do not overmix.
  5. Turn the dough out onto a lightly floured surface, and shape into an 8-inch round disc. Cut into 8 wedges, and transfer them to the prepared baking tray.
  6. Lightly brush each scone with heavy cream, then bake for 20 - 25 minutes or until lightly golden and cooked through. Allow to cool on the baking tray for 5 - 10 minutes before transferring them to a wire rack to cool slightly whilst preparing the glaze.
  7. For the Glaze
  8. Whisk together the icing sugar and milk until smooth and runny. Drizzle over warm or room temperature scones and enjoy!

  • 8 pieces of uncooked chicken tenderloins
  • 1 can of refrigerated crescent dinner rolls
  • 1/2 cup of mayonnaise
  • 1/4 +3 Tablespoons of grated Parmesan cheese
  • 4 slices of deli-style mozzarella cheese
  • 3 Tablespoons butter
  • 1 cup marinara sauce
  • salt and pepper

Instructions

  1. Heat the oven to 375 degrees and spray a cookie sheet with cooking spray.
  2. Season each side of chicken with salt and pepper and melt 2 tablespoons of the butter in a skillet over medium high heat on the stove. Cook the chicken for about 10 minutes until each side is nicely browned, and set aside.
  3. In a small bowl, mix together the mayonnaise and 1/4 cup of parmesan cheese. This will serve as a wonderful coating for the chicken to give it an extra kick of flavor.
  4. Unroll each triangle of crescent rolls and place one piece of chicken at the wide end of each one. Spread a good layer of the mayonnaise mixture on top of each piece of chicken.
  5. Divide the mozzarella slices in half to create 8 slices, and add to the top of each piece of chicken.
  6. Roll the crescent dough around each piece of chicken and place on the prepared cookie sheet. Melt the remaining tablespoon of butter in the microwave and brush over the tops of each crescent roll. Then sprinkle each roll-up with the remaining grated parmesan cheese.
  7. Bake for 14-15 minutes or until the roll-ups are golden brown.
  8. Serve with warmed marinara sauce. Enjoy!

  • 1+1/4 cups milk (300ml)
  • salted caramel frosting
  • 1 cup butter (226g)
  • 1+1/2 cups brown sugar (300g)
  • 3/4 - 1 cup heavy whipping cream (180-240ml)
  • 3/4 tsp salt
  • 2 vanilla beans (or 2 tsp vanilla extract)
  • 5 - 6 cups powdered sugar (600-720g)
  • topping
  • 1 cup butter (226g)
  • 1+1/2 cups brown sugar (300g)
  • 1/2 cup heavy whipping cream (120ml)
  • 3/4 tsp salt
  • 10 cups popped corn (100g)

Instructions

  1. Preheat oven to 350°F / 175°C. Line the bottom of two 9“ springform pans with parchment paper and lightly grease the sides. Set aside.
  2. Cake: In a large bowl whisk together flour, baking powder, and salt to combine. Set aside. In a large mixing bowl, using a handheld or stand mixer fitted with a whisk or paddle attachment beat butter and sugar until creamy for about 2 minutes. Add eggs and vanilla* and mix until combined. Alternately add dry ingredients and milk and mix on low speed just until combined. Begin and end with dry ingredients. Divide batter into the two prepared springform pans equally. Bake for about 23-25 minutes or until a toothpick centered in the middle comes out clean. Let cool to room temperature before frosting.
  3. Frosting: In a small saucepan, melt the butter over medium-high heat. When butter is melted, add brown sugar and 1/2 cup of heavy whipping cream and bring to a boil. Cook for about 2 minutes. Whisk continuously. Remove from heat and stir in salt and vanilla* until combined. Transfer to a large heat-proof mixing bowl. Let cool to room temperature. 
  4. Add 5 cups of powdered sugar to the cooled caramel little by little and stir on medium-low speed until it's starting to get crumbly. Add ¼ cup heavy cream and mix on medium speed until combined and creamy. Add more sugar or heavy cream little by little if the consistency is too liquid or too little creamy. The consistency should be creamy but firm enough to spread. Add salt and stir to combine. When you add more sugar, you may increase the salt amount to your taste. 
  5. Cut cake layers in half horizontally. Spread with ¼ of the frosting. Place a second cake layer on top and frost again. Repeat two more times. Spread remaining frosting on top of the cake and around the sides. Chill in the fridge at least 4 hours. 
  6. Topping: In a small saucepan, melt the butter over medium-high heat. When butter is melted, add brown sugar and 1/2 cup of heavy whipping cream and bring to a boil. Cook for about 2 minutes. Whisk continuously. Remove from heat and stir in salt and vanilla* until combined.
  7. Transfer popcorn to a large bowl and pour 1 cup of cooked caramel on top. Stir until popcorn is evenly moist. 
  8. Pour the remaining caramel around the edges of your chilled cake that it drips down the sides. Place caramel popcorn on top of the cake. Store leftovers in an airtight container in the fridge up to 3 days.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium onion chopped
  • 12 ounces portobello mushrooms chopped
  • 2-3 cloves garlic minced
  • 3 dashes Italian seasoning
  • 1 heaping teaspoon Dijon mustard
  • 1/3 cup dry white wine
  • 1 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 1 generous handful baby spinach
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper to taste
  • Fresh parsley chopped, to taste


Instructions

  1. Add the olive oil to a skillet on medium high heat. Add the onion and sauté for 5 minutes, stirring occasionally. It's ok if it becomes lightly browned.
  2. Add the mushrooms, garlic, and Italian seasoning. Continue to cook, stirring occasionally, for another 5 minutes.
  3. Stir in the Dijon mustard and white wine. Let it bubble for a minute or so.
  4. Add the cream and gnocchi. Wait until it starts to bubble again, then cover the pan and reduce the heat to medium-low. Cook for 3 minutes.
  5. Stir in the spinach, cover the pan again, and cook for 3 minutes.
  6. Stir in the parmesan and season with salt & pepper. Give it a taste; gnocchi should be soft. If not, continue to cook for another few minutes. Garnish with fresh parsley. Serve immediately with more parmesan cheese grated over top if desired.

  • 6 whole bell peppers any color
  • 3/4 to 1 pound lean ground beef
  • 1 white onion diced
  • 3 cloves garlic minced
  • 1 15 ounce can diced tomatoes, drained
  • 1 cup cooked white rice
  • 1 cup frozen corn
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded pepper jack cheese divided

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 9x13 pan.
  2. Trim the tops off each bell pepper and remove seeds and membrane from inside. Place the bell peppers into the prepared pan.
  3. In a large skill over medium high heat, cook ground beef and onion until browned. Drain any excess fat or liquids. Add in garlic and cook 1 minute more.
  4. Remove from heat and stir in tomatoes, cooked rice, corn, Worcestershire sauce, salt, pepper, and 1 cup pepper jack cheese.
  5. Spoon mixture into bell peppers until full. Sprinkle remaining cheese over the top.
  6. Bake in the preheated 350 degree oven for 30 minutes until cheese is bubbling and browned.
